Le 18 février, aura lieu à Paris la première édition des World Restaurant Awards. Ce nouveau classement se différencie des fameux « World’s Fifty Best » ou du « OAD » (Opinionated About Dining) car il ne s’agit pas d’une simple liste ou de points attribués à des restaurants. Il s’agit plutôt ici, dans un esprit festif et de transgression, de désigner le meilleur de sa catégorie. Des catégories sérieuses, comme la meilleure ouverture de l’année, le restaurant se distinguant par sa philosophie éthique ou encore l’adresse classique de l’année. Mais aussi des catégories plus amusantes, comme le chef non-tatoué, la cuisine sans pincette ou le chariot de l’année. Certaines d’entre elles permettent de récompenser non seulement des adresses gastronomiques réputées et des chefs innovants, mais aussi des adresses plus accessibles.

18 catégories sérieuses ou drôles

Au menu donc, 12 catégories « Big Plates » (dont le restaurant de l’année, qui sera choisi parmi ceux-ci) et 6 « Small Plates », qui changeront chaque année, après consultation du jury.

Cette liste de restaurants a été compilée par un jury de 100 personnes – chose rare dans le milieu de la gastronomie, il est intéressant de signaler que ce jury est constitué de 50% de femmes -, en provenance de 37 pays différents. Un jury qui réunit des journalistes (dont La Fille de ce blog…), des auteurs et des chefs connus, comme René Redzepi, Massimo Bottura, Alex Atala, Clare Smyth (photo), Elena Arzak… Un jury emmené par le duo de choc: Andrea Petrini, journaliste gastronomique et responsable du collectif de chefs Gelinaz, qui prend ici le rôle de président du jury, et Joe Warwick, auteur notamment du cultissime Where Chefs Eat paru chez Phaidon, et directeur artistique des World Restaurant Awards. Un événement organisé par International Management Group (IMG), un groupe marketing, événementiel et de management sportif présent dans plus de 30 pays.

En janvier, on connaîtra les restaurants qui feront partie de la short list. Tandis que, le 18 février, lors d’une cérémonie qui se déroulera au Palais Brogniart à Paris, on saura enfin qui sera le gagnant de chaque catégorie.

9 Belges en lice

Parmi les prétendants, on retrouve plusieurs belges, nommés dans diverses catégories. A Gand, Kobe Desramaults (photo) est nommé pour sa cuisine au feu de bois rock’n’roll au Chambre Séparée dans la catégorie « Atmosphère ». Dans celle de la « Collaboration de l’année », on retrouve pas moins de trois chefs belges: Christophe Hardiquest chez Bon Bon à Bruxelles (pour son travail avec la brasserie Cantillon), Nick Bril au Jane à Anvers (association avec le fabricant de vaisselle recyclable Natural Tableware) et Filip Claeys au Jonkman à Bruges (pour son travail sur les poissons durables de la mer du Nord via North Sea Chefs).

Karen Torosyan, de l’excellent Bozar Restaurant à Bruxelles ne pouvait pas passer inaperçu pour la « Spécialité de la maison ». Surprise, ce n’est pas pour son pâté en croûte mais pour son formidable millefeuille. Tandis qu’avant sa fermeture, le 22 décembre prochain, le Hertog Jan de Gert De Mangeleer a impressionné du côté du « Chariot de l’année ». Là où, dans la catégorie « Forward Drinking » (une offre de boissons vraiment différente), on retrouve le Humphrey à Bruxelles et L’air du temps de San Degeimbre à Liernu (pour ses « créations sans alcool » réalisées notamment à l’aide d’ultra-sons). Le chef deux étoiles de Liernu avait d’ailleurs participé à l’un des événements de Mary Pop-in, un concept lié à la lutte contre le gaspillage alimentaire nommé, lui, dans la catégorie « Ethical Thinking ».
